The 3-Day Plant-Based Challenge - The Entrepreneur Doesn't Starve #TJV3DC

Disclaimer: I'm not your average person when it comes to eating. I usually eat breakfast late, I don't eat a lot when I indulge nor do I have to eat three meals a day to be satisfied. So while the following food log is not typical, I hope you can glean something useful. And no, I'm not starving. :-)

Here is my food log:

Day 1:

  • Breakfast: Cinnamon raisin bagel and non-dairy vanilla yogurt - Whenever I eat vanilla yogurt, I use my bagel as my spoon. The cinnamon raisin vanilla combo is delicious.
  • Lunch: Spinach, pineapple, green pepper pizza with vegan cheese and bbq sauce sprinkled on top
  • Snack: a large bowl of pistachios
  • Dinner - I skipped.

Day 2:

  • Breakfast: Bowl of Honey Bunches of Oats cereal with almond milk
  • Lunch: Potatoes with onions and green peppers, pita chips and The Perfect Pita Jalapeno Hummus
  • Snack: Pistachios, Cliff Bar
  • Dinner - I skipped.

Day 3:

  • Breakfast: Large bowl of quaker oatmeal with honey, cinnamon sugar, and berries
  • Lunch (3pm): Bowl of penne rosa pasta with tofu from Noodles and Company minus the Parmesan cheese (spicy tomato sauce, mushrooms, tomato and spinach)
  • Snack: pita chips and jalapeno hummus
  • Dinner - I skipped.
